     Everyone knows that the United Kingdom is an impressive place to live and an even better place to have a holiday on. This is because the UK is so diverse with so many great places and cities to visit, from London, to Manchester, to Cardiff, and some of the islands, including the Isle of Man and Jersey. However, an often neglected part of the UK is Scotland, and while the capital city, Edinburgh, becomes famous every year thanks to the Edinburgh Festival Fringe and the International Festival, there are so many other places to visit and explore across the border. And here are just a few suggestions.

     When a lot of people think of Scotland, they probably think of images of rolling hills, mountains, breathtaking landscape, purple heather and of course, castles. This is a very accurate representation of Scotland, however, you need to leave the big cities behind and head to the highlands of Scotland in order to see these things. The highlands are located in upper Scotland, and are less densely populated than the major cities such as Edinburgh, Glasgow, Aberdeen, Dundee and Stirling.      Arancini - Balls of rice with tomato sauce, eggs, and cheese that are cooked by deep frying. They are a southern Italian specialty, though are now quite common all over.

     Polenta - Yellow corn meal (yellow grits) that has been cooked with stock. It is normally served either creamy or roasted. It is a very common dish in northern mountains restaurants, usually eaten with deer or boar meat.

     Gelato - The Italian word for ice cream, that has a non-fruit flavor that is usually made only with milk. Gelato made with water and without dairy ingredients is also known as sorbetto. It's fresh as a sorbet, but tastier. There are many flavors, including coffee, chocolate, fruit, and tiramisù. When buying at a gelateria, you have the choice of having it served in a wafer cone or a tub; in northern Italy you'll pay for every single flavor "ball", and the panna (the milk cream) counts as a flavor; in Rome you can buy a small, medium, or a large wafer cone without limit of flavors, and the panna is free.

     Tiramis Italian cake - made with coffee, mascarpone, and ladyfingers (sometimes rum) with cocoa powder on the top. The name means "pick-me-up".

It is the perfect time to make the subjects they are learning about come alive, and to show them just how fun learning about the world around them can really be. Here are a few tips on how to make your next field trip great.

Be Prepared

     Well before the exciting day arrives, do your research and write up a list of everything your students will need to do and know in order to arrive prepared. This list may include suggestions for proper attire, including weather appropriate clothing and footwear that will fit the planned activities, suggestions for lunches to pack, and what is OK to bring and what must be left at home. For example, some trips might be a good time for cameras, but for others, like museums that do not allow photography, cameras should be left at home. Depending on your destination, you may want to give a special talk about the right kind of behavior for the trip as well. Making it very clear what is expected of your students before you are out and about will help to ensure that the day goes smoothly.

Make It Memorable

     The best way to ensure that your field trip will really stick with your students is to have them truly engaged in the place that you are visiting. There are some destinations that will create this engagement naturally. For others, however, like a walk through a forest or other natural setting or a trip to an art museum, you may need to help them keep their focus. You know your students best, so plan for what you know will hold their interest. If they are mature and already interested in their destination, a simple worksheet might be enough. For a rowdier or more easily distracted crowd, consider something a bit more exciting, like a scavenger hunt.
